1. Flavour Circuit
The most popular format for team-building is something I call ‘flavour circuit’ which enables all participants to make all the dishes, rather than just working on their one dish with their team. It’s a lot of fun and very interactive.
A LITTLE FRIENDLY COMPETITION
If your group wishes, we can make the event a competition. My assistants and I evaluate and then vote on the various dishes created in the class. Plate presentation, creativity, teamwork, team spirit and cleanliness of workspace all figure into determining the winner.
SAMPLE STATIONS (choose 4 for your event)
- Baby Arugula and Kale with Roasted Almonds and Fresh Herbs
Each team member will prepare and plate his/her own salad. - Mixed Greens with Pears, Pecans, Goat Cheese and Raspberry Chipotle
Each team member will prepare and plate his/her own salad. - Potato Gnocchi with Sage Butter Sauce
Each team member will learn how to make and roll gnocchi from scratch. Gluten free and vegan individuals will be served gluten free/eggless pasta and lactose intolerant and vegan individuals will be served tomato sauce. - Handmade Pasta with Sage Butter Sauce
Each team member will learn how to make handmade pasta from scratch. Gluten free and vegan individuals will be served gluten free/eggless pasta and lactose intolerant and vegan individuals will be served tomato sauce. - Sushi Rolling Station (can be made Vegetarian instead, if requested)
Each team member will learn how to make his or her own California Roll. - Phyllo Triangles with Ricotta and Moroccan Spices
Each team member will learn how to work with phyllo pastry. - Chicken Schnitzel
Each team will learn how to make Schnitzel. Vegetarians and vegans will be served Chickpeas. - Chicken Piccata
Each team will learn how to make this classic Italian chicken dish. Vegetarians and vegans will be served Eggplant.
- Moroccan Chicken Tagine with Couscous
Each team will learn how to cook this delicious chicken dish. Vegetarians and vegans will be served Moroccan Chickpeas with Couscous. - Beef Tenderloin with Balsamic Honey Sauce (an additional $10 per person)
Learn the secrets of perfectly searing and roasting centre-cut beef tenderloin. Vegetarian and vegans will be served chickpeas.
Dessert (Choose 1 for your event)
Apple Cake with Warm Honey Sauce
or
Bourbon Chocolate Cake with Whipped Cream and Berries (an additional $2 per person)
If an individual is gluten free or vegan, they will be served fruit salad for dessert.
2. Sit-Down Meal
For the sit-down option, the group will divide into teams and each team will work on a specific part of the meal.
The most popular sit-down menu is:
Crostini with White Bean and Rosemary or Crostini with Spring Pea Puree (choose one)
Mixed Greens with Pears, Pecans, Goat Cheese and Raspberry Chipotle or Baby Arugula and Kale with Herbs and Roasted Almonds (choose one)
Seared Beef Tenderloin with Balsamic Honey Sauce or Prosciutto wrapped Beef Tenderloin with Red Wine Reduction (choose one)
Spring Vegetable and Herb Risotto or Roasted Butternut Squash and Sage Risotto or Roasted Smashed Potatoes (choose one)
Apple Strudel with Vanilla Whipped Cream or Meringue Nests with Fresh Berries and Whipped Cream (choose one)
We can discuss other menu options with you once we get more information about your group. Choose from Seasonal Entertaining, Thai, Italian, Indian, Moroccan. Or we can work together to customize a menu of 5 dishes.
